As the first of its kind, M at the Fringe started a trend for independent fine-dining when it opened in 1989, and has since been the inspiration for countless restaurants in Hong Kong. The cuisine at M at the Fringe almost defies culinary classification: contemporary, but not fusion; studied, but not fussy. The food is fundamentally European, with dishes from the Middle East and North Africa often making an appearance. But all dishes, no matter what their origin, share the quality of being delicious, honest food. At M at the Fringe, you are served in a gorgeous high-ceilinged room above the Fringe Club, a contemporary art and performance space that is a Hong Kong landmark in its own right. The quirky, romantic design of the dining room, though 18 years old, remains contemporary, fresh and comfortable.
